Brownies stuffed Smore's Bars

I've been craving brownies for a long time now. So much that yesterday I gave in and made a batch. They were good but not phenomenal good so we had leftover. Today we had guests therefore I needed to bake something. Something easy, quick and delicious! My mom suggested s'more bars... Then an idea came to me. What if I hid the rest of the brownies between a layer of chocolate and cookie dough? Sounds pretty fantastic, doesn't it? Well, let me tell you. It IS fantastic! It's like phenomenally fantastic! Just imagine a layer of cookie dough, brownies, chocolate, marshmallows and another layer of cookie dough. Topped with a scoop of ice cream. Drooling yet? You most definitely SHOULD be! Eggplant-Basil Grilled Cheese on Rye

If there was a grilled cheese eating contest, I would most definitely sign up first! I've never mentioned my love for the gooey sandwich but I have a serious, long-lasting relationship with it. And it won't change anytime soon. Because really, grilled cheese is just the most perfect food of all times! It is so versatile, so easy, so quick, so filling and oh so delicious! It's melted cheese between two crispy slices of bread! Melted cheese!!!! Melted cheese is the best thing. Ever. No doubt about it so don't even try to convince me that I will get fat from it... Healthy Peanut Butter Oatmeal Chocolate Chunk Cookies

Today I woke up and had the urge to bake something. At first, I was very VERY intrigued by a wonderful brownie recipe but then I came to my senses...that no, today is Wednesday! And brownies don't happen on Wednesdays around here. So I scolded myself for even thinking about it and swore that I will work out something vigorous instead :) But the scorching desire to bake something was still there! Ahhh! What to do now? I had a bag of unsalted roasted peanuts in the pantry so first let's make some peanut butter! That's healthy. And easy. Way too easy, I needed something more. So when I have peanut butter, let's make cookies with it!! Right??? Such a lovely idea!  I was looking through a couple PB cookie recipes and I originally wanted a no-flour kind but when I saw the amount of sugar each had...
