I've been craving brownies for a long time now. So much that yesterday I gave in and made a batch. They were good but not phenomenal good so we had leftover. Today we had guests therefore I needed to bake something. Something easy, quick and delicious! My mom suggested s'more bars... Then an idea came to me. What if I hid the rest of the brownies between a layer of chocolate and cookie dough? Sounds pretty fantastic, doesn't it? Well, let me tell you. It IS fantastic! It's like phenomenally fantastic! Just imagine a layer of cookie dough, brownies, chocolate, marshmallows and another layer of cookie dough. Topped with a scoop of ice cream. Drooling yet? You most definitely SHOULD be! Or even better, just try it!
Brownies stuffed S'mores Bars
160 grams butter - about 3/4 cup
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
vanilla
1 + 3/4 cup flour
1/2 cup ground graham crackers
1 1/2 teaspoons baking soda
1/2 teaspoon salt
150 grams chocolate squares or chips
1 cup marshmallows - cut to halves
1/2 batch of your favorite brownies
Cream together the butter and sugars until light and creamy. Add in the eggs, one at a time. Add the vanilla. In another bowl, combine the flour, baking soda, salt and ground graham crackers. Incorporate the dry ingredients to the butter mixture.
Grease a medium baking pan and place half of the dough in it. Use your fingers to layer it evenly, the dough will be very sticky.
Cut the brownies into smaller but flat pieces and place them over the cookie dough. Add the chocolate on top. Place the marshmallow over the chocolate and then cover it with the remaining cookie dough. It will be a bit tricky but just flatten the dough with your palms and then cover the marshmallows.
Bake it for 30 minutes on 175C or until the top is golden brown. Let it cool for about 15 minutes before cutting it. Serve it with a scoop of vanilla ice cream :)
Delicious, quick and easy! A hit with the family!
