Today is sunday. Sunday = Family day. This is when we cook then eat and pretty much spend the whole day together. This is when the word diet is forbidden to mention. Even if one or all of us is on a diet because it is Sunday. DUH. The ultimate day of forgiveness. No matter how we indulge in any enjoyment, there will not be any consequences. Besides maybe feeling a little way too full ;)
So I decided a few days ago that this weekend I will finally make the dessert that is on my got-to-make-recipes. Not only on that list but top of it, indeed. :)
I have never ever made tiramisu before. Actually I've never really eaten a good one before. Only something that was way too sweet, queasy and mushy and it was called tiramisu. Oh my, what a shame to turn something so amazing into that I just explained. So before I started preparing this Italian deliciousness I spent a lot of time picking the perfect recipe. To tell the truth, this was the hardest part of the whole procedure. I found millions of tiramisu recipes but I just couldn't pick one that looked or sounded like a good one. I wanted to be as authentic to the original Italian version as I could so the recipes that involved more than mascarpone cheese, sugar, eggs, ladyfingers, coffee and liquore, well...they were out. Because these are the ingredients that will lead to the heavenly good real tiramisu.
My mom was especially dubious about this tiramisu making. Because she doesn't really like it but after she tasted...She LOVED it. Everyone did. It's already gone except for my leftover, I was just too full to eat the whole thing. But all in all, it was a success. The ladyfingers didn't turn out to be mushy, either. Just perfect. So it is important not to soak the ladyfingers in the coffee-liquore mixture for long. It depends on how the fingers are. Mine soaked up so much in just half a second but there are some types that need a few seconds to soak just enough. The other thing I read in one of the recipes that I should whisk the egg yolks with sugar for at least 4-5 minutes. I really did see the difference! And I also whisked the mascarpone cheese before adding it to the egg-sugar mix. It is very important in order to get a fluffy and creamy cream :) It will even out the occuring loops. I didn't have any but I've seen pictures that had. Well...Here you go with the recipe :)
I adapted the recipe from the cookbook called Dolce Vita
250 grams Mascarpone Cheese
200 grams Ladyfingers
3 eggs (on room temperature)
2 dl coffee
1/2 dl rum or any other liquore, I used Amaretto
3-4 tablespoons sugar
Whisk together the eggyolks with the sugar with a mixer for 5 minutes until it is fluffy and creamy. Whisk the mascarpone for a few minutes and then add to the egg-sugar mix and continue to beat it until it looks creamy.
Beat the egg whites with a little salt until stiff and carefully add it to the mascarpone cream.
Stir together the coffee and liquore and dip the ladyfingers in it just for half a second (or until it seems right, only the half should be soaked).
Layer the soaked ladyfingers in a pan then spread half the cream and do the same again.
Cover it with a foil or a plate, whatever fits your pan, and chill in the fridge for at least 4 hours but best if it chills overnight. Before serving sprinkle cocoa powder on it lightly. Enjoy :)
