The Best Fudgy Brownies Ever

Oh Em Gee. It's been so so long since I appeared alive on this blog. Makes me kind of want to keep myself hidden, I feel so ashamed that I abandoned this love child of mine for such a long time.

But I thought if I return then it should be at least good. So I thought I'd bring you the bomb. The bomb of brownies. I know everyone has a favorite, go-to brownie recipe but ya'll nothing will beat this one. Unless you don't like chocolate. Or like cakey brownies. Then this recipe is most definitely not for you :)
These brownies are seriously extraordinary, finger-lickingly good! And I'm saying this without being biased.

Imagine a piece of fresh and still warm brownies with a scoop of vanilla ice cream. The top is slightly cracked (really, only slightly), the inside is heavenly gooey without it being unbaked, sweet but not overly sweet and the vanilla ice cream just brings out the intense chocolate flavour. This scenario should be familiar, right? Now, imagine this with a thin layer of chocolate ganache on top and some hidden oreo bits inside.
Oh, and the best of all? The next day, it even tastes better! How could it be possible? But it is, I had the strongest urge this morning to have a small piece for breakfast ( hello diet!) and it was thick, totally fudge-like and utterly delicious. I altered the famous baked brownie recipe a bit (less butter, less sugar, less chocolate, more ganache, more oreos) and ended up with this brownie extraordinaire.

It's so easy and quick to whip up and I highly advice you make it for a family or friends gathering since it's a big one. We were 5 for the pan and not even its half was gone.

oh and ps: my reason for being absent for the past few months is that I was in Indonesia for 2 months! I might post some pictures of my adventures later ;)

Best Fudgy Brownies
use a 9X12 inch pan

1 1/4 cups flour - I used bread flour, I always think it makes everything chewier :)
1 tsp salt
2 Tbsp unsweetened cocoa powder
300 grams (or 10.5 ounces) chocolate - I used 55%
200 grams (or 14 Tbsp) butter
2 tsp instant coffee
1 1/4 cup granulated sugar
1/2 cup brown sugar
4 eggs, at room temp.
2 tsp vanilla extract
6 oreo cookies - broken into small bits

for the ganache
100 grams chocolate
1 Tbsp oil
2 Tbsp heavy cream

Preheat oven to 350F (175C). Grease the bottom and sides of your pan.

In a bowl, combine the flour, cocoa powder and salt together.

Melt the chocolate, butter and coffee in a bowl over a pan of simmering water. Stir occassionally, when they're all melted, turn the heat off and add the sugars in. Stir it until the sugar is dissolved, then remove the bowl from the pan and let the mixture cool to room temperature.

When the chocolate mixture has cooled, mix in 2 eggs at first, then the other 2 and vanilla. Don't overmix or your brownies will be cakey.

Fold in the flour to the chocolate mixture and mix it with a rubber spatula. Drop the oreo pieces in. Pour the batter into the greased pan and bake for 25 minutes.

While your brownie is baking, make the chocolate ganache. Place the chocolate and oil in a small saucepan and over low heat cook them until the chocolate is melted. Turn the heat off and add in the cream. Stir and let it cool.

When the brownie is ready, let it cool to room temp and spread the ganache on top.
Enjoy :)

Hungarian Kakaós Csiga (Chocolate Rolls)

Frankly, I missed baking so much! Even though I needed one baking-free month to lose all the weight I gained due to the excessive baking mania I got over this summer I just cannot stop it! So I decided that I don't have to give up this love of mine but I do have to figure out something that will not leave me end up gaining weight again. What to do, what to do...Bake only in the weekends! And probably I should get a grip and not stuff my face until I can't move...Which didn't really happen today. I ate like 6 of these lovely chocolate rolls...I guess, no dinner for Csilla tonight :P These rolls are from a traditional Hungarian pastry recipe. I called my Grandma to ask for the recipe and as it always happens with Grandma recipes she did not know the measurements...I don't know if it's only with my grandmas but they always work with their eyes so they usually have no idea how much grams I need from this or that... So I turned to an ancient Hungarian cookbook and that i…

Sajtos Pogácsa - Hungarian Cheese Puffs

We have different traditions in Hungary in the holiday season. Santa, I mean St Nicholas, comes on 6th December here and on Christmas Eve we are waiting for the little Jesus to bring our presents! Of course, as an almost 22-year-old I don't expect any gifts on Nicholas day...That is why I was so surprised when I got absolutely the coolest thing ever! A plastic bread-board! I had a huge wooden one that was very heavy, very hard to clean and needed such a big space. Look at this beauty :)

It has everything I might need. Measurements, unit converter, it can be rolled up, I don't need to use flour for kneading...I know exactly how big I need to knead the dough, it is perfect!  So, of course I just had to try it out! :)
I've been waiting for these cheese puffs' recipe for years now. It is a traditional, old school Hungarian pastry. It is made with yeast and it tastes amazing! These mini puffs are crunchy on the outside and super duper soft inside! This recipe is the ultimate c…

Pad Thai

I feel so bad about not posting anything for weeks. I have my excuses. But who likes hearing about excuses? Not me! So probably no one else, either.  Although I'd like to share that I have finished writing my thesis! I wrote about the crises' of South Asia. It was such a drag...I had a serious writer's block going on and I procrastinated so much that in the end I had 2 weeks left to write the whole thing. I basically did nothing besides writing, eating and sleeping. Exciting life, huh? Now that it's over, I've got even more scholar stuffs to do than before! But I'll be graduating in 2 months, if all goes well...So that's worth all the hard work, right? :)
But enough about me and let's talk about these noodles! I do not think there's one person who wouldn't like pad thai! Even those who swear not to eat any weird looking asian food, like my Grandma, will like this meal after having one bite! It is an authentic thai recipe, due to my Mom went to a Th…
