Coconut Grits Dumplings

The past weeks have not been easy on me thus there was no posts from me. I feel terrible about it but probably due to stressing I was just simply out of inspiration. Even today, when I came home to my parents' I had no idea what to make that would cut it to make it on the blog.
Cooking and baking just weren't a priority lately. I missed it but every time I finally started to make something, nothing turned out any good! Has it ever occurred to anyone that even if you paid attention, you just messed everything up? Well, that just took all my joy away so I just kinda stopped doing it.

It's not like I didn't cook anything but nothing were just phenomenal to post about, you know? Until today! I've been eyeing this recipe since I first saw it but I just never got to it. Too bad! Because these dumplings are just ridiculously easy to make and ohhh my gosh sooo good!! I'm not exaggerating, they are really really delicious! The base is a very simple grits porridge that is made with coconut milk instead of regular. The coconut milk makes all the difference! At first, I only substituted because we don't tolerate regular milk very well but then after tasting it, it is SO much better! It gives such a full flavor that it gives a whole new dimension to the simple porridge. And after it's cooked, you just cut a tablespoon-ful and coat it in toasted bread crumbs. To make it even better, have some homemade apricot or strawberry jam with it. Amazing!

Coconut Grits Dumplings
makes for 3 people

1 can coconut milk - 400 grams
1/2 cup grits - 85 grams
1/4 cup brown cane sugar - 50 grams
1/4 teaspoon salt
1 teaspoon vanilla extract
2 tablespoon butter - 25 grams
1 cup bread crumbs - about 100 grams
a few tablespoons fruit jam

Bring the coconut milk, sugar, vanilla and salt to a boil over low heat. Add in the grits and continuously stirring, cook it for about 8 minutes until it's thick. Place it in the fridge for 10 minutes.

Melt the butter in a pan. Add the bread crumbs and toast it for about 10 minutes or until golden brown. Stir it occasionally.

To make the dumpling, cut a small bit from the grits using a tablespoon.

Shape the dumpling with the help of another tablespoon and place it in the bread crumbs.

Dip it evenly in the crumbs.

And that's it! Keep doing the same thing with the remaining grits. Sprinkle powdered sugar on top and serve it with some jam. Enjoy :)

Brown Butter Walnut Cake with Chocolate-Mocha Ganache

This post is yet again an example of how I procrastinate when it comes to studying or making a presentation. Whichever. This is going to be a lovely tale about a "magnifique" cake.  I got my inspiration to make that brown butter walnut sensation from  Procrastobaker . It is seriously one of the best things I've ever baked. I do not think the photos do justice when I tried to catch how breath-taking the cake is once a bite lands in your mouth... It is crispy on the outside and so juicy in the inside and the chocolate-mocha ganache goes just perfectly well with it. I changed the original recipe a bit, as I worked with walnuts and I added a layer of chocolate cream inside the cake, as well. Also, it is important to add that it is best one day after it was made. While it chilled in the fridge. Oh my... It was such a hit! Definitely going to make it again...and again... :) But I won't keep you on your toes and fill you in with this lovely recipe! Hungarian Kakaós Csiga (Chocolate Rolls)

Frankly, I missed baking so much! Even though I needed one baking-free month to lose all the weight I gained due to the excessive baking mania I got over this summer I just cannot stop it! So I decided that I don't have to give up this love of mine but I do have to figure out something that will not leave me end up gaining weight again. What to do, what to do...Bake only in the weekends! And probably I should get a grip and not stuff my face until I can't move...Which didn't really happen today. I ate like 6 of these lovely chocolate rolls...I guess, no dinner for Csilla tonight :P These rolls are from a traditional Hungarian pastry recipe. I called my Grandma to ask for the recipe and as it always happens with Grandma recipes she did not know the measurements...I don't know if it's only with my grandmas but they always work with their eyes so they usually have no idea how much grams I need from this or that... So I turned to an ancient Hungarian cookbook and that
