Peaches n' Cream Oatmeal

It's maybe due to the fact that I eat oatmeal about 5 days a week for breakfast but I am like the happiest kid around the kitchen when it comes to creating newer and newer types of oatmeals. Oatmeal is one of the best foods out there. Seriously! Okay, if you don't sweeten it with a ton of sugar. But it will reduce the risk of heart disease, it will ease your digestion, it fills you up so you don't have to eat a lot, therefore it has a weight loss effect, as well! And these are only a few of the benefits of oatmeal. i encourage everyone to eat it as much as they can because really, breakfast is the most important meal of the day and I suggest you to have it right! :) It will make you want to keep eating healthy for the rest of the day. Or something like that... I do cheat from time to time, even if I started with oatmeal. :P

Today I had this more than amazing oatmeal as a snack/early dinner because I just wanted something sweet, low-calorie and light before a nice workout (I am still ahead of that nice workout :D ) so oatmeal just seemed perfect! I eat my oatmeal in the morning salty and when I eat it as a dinner I like to sweeten it up. Who knows why... So I saw some lonely nectarines in the kitchen and the recipe just came together! A super creamy, fruity dessert porridge! Yum! This is honestly the best oatmeal I've ever eaten. I know, I always say that. Well, I am a fickle creature :) And I always fall in love with something new... Oh!! I almost forgot to mention! This oatmeal is vegan!! How cool is that?? :)

Peaches n' Cream Oatmeal
makes for 1 person

1/2 cup oats
1/2 cup rice milk or any type of milk substitute
1 cup water
1 nectarine or peach, cut into small bits
1 teaspoon vanilla
1 teaspoon salt
1 teaspoon agave syrup
1 teaspoon brown cane sugar
1 teaspoon non-dairy cream

In a medium saucepan, measure out the oats, rice milk and water. Place the pan on a very low heat and season the oats with salt. While it's cooking, cut the peach and add it to the mixture. Add the agave syrup and cane sugar. Stirring occasionally, cook it for about 15 minutes. Add the vanilla. Before serving, add the splash of cream.

  2. What a lovely recipe! A great way to start the morning. Although next time, I'm going to try only a 1/2 cup of water. It came out a bit soupy with the full cup, and took quite a while to cool down. Other than that, very tasty.

    1. Really?? Soupy? Oh, I'm sorry, that's such a bummer! It might be the oats... The ones I use soak up an incredible amount of water so when I use 1/2 cup water it's too dense and thick. But I'm happy that you liked its taste, at least :)

Brown Butter Walnut Cake with Chocolate-Mocha Ganache

This post is yet again an example of how I procrastinate when it comes to studying or making a presentation. Whichever. This is going to be a lovely tale about a "magnifique" cake.  I got my inspiration to make that brown butter walnut sensation from  Procrastobaker . It is seriously one of the best things I've ever baked. I do not think the photos do justice when I tried to catch how breath-taking the cake is once a bite lands in your mouth... It is crispy on the outside and so juicy in the inside and the chocolate-mocha ganache goes just perfectly well with it. I changed the original recipe a bit, as I worked with walnuts and I added a layer of chocolate cream inside the cake, as well. Also, it is important to add that it is best one day after it was made. While it chilled in the fridge. Oh my... It was such a hit! Definitely going to make it again...and again... :) But I won't keep you on your toes and fill you in with this lovely recipe! Homemade Nutella

I was an exchange student (ah how many times I've said this sentence...) 5 years ago in the US. I'm not gonna talk about how it was (AMAZING) but then and there I gained sisters! Now I have one living in the States and one living in Germany. And next week we are gonna be reunited! I can't wait, I am so excited! So this week I am going to Germany and was thinking what I should bring. Because basically Germany has everything that Hungary has, if not more. So what to give what to give? I was thinking really hard when a completely random thing came to my mind. I should make some nutella. She loves nutella. Frankly, who doesn't, right? I love it, too although it's been years since I ate any. I can't really explain why because I always think that if I eat just one spoon, I will gain a 100 pounds immediately. But with this thought, I shouldn't be eating any brownies, cookies...etc.  BUT today I tried my homemade Nutella. OH MY GOD. I wouldn't have though
