Brazil Nut Chocolate Chunk Cookies


I am such a cookie fanatic. I could probably eat cookies every single day. Although I don't. I actually hardly ever bake cookies. Sadly or fortunately. :)
So today I was not gonna bake anything, I am studying for my last final exam before graduating college. So fingers crossed for me!!
But I had had enough for today. I literally couldn't make sense of anything I tried to study. So I decided that's enough. I need a break. I need comfort. I need...comfort food? Yup. Cookies make me so happy. Baking cookies make me even happier. Thus I made some! Okay, a friend of mine told me she was making one of my cookie recipes and I immediately got the urge to make some, as well ;)
I didn't feel like waiting 24 hours for the dough to chill so I picked a recipe that looked pretty awesome, halved it since there's only 2 of us at home. And here you go. This cookie recipe is up to the point. Chewy, nutty, sweet, quick and easy! 
Perfect for one of those days when you feel like you're dying to eat a cookie and you want that cookie right now!

Brazil Nut Chocolate Chunk Cookies
adapted from Smells Like Home
makes 6 big cookies

1 cup flour
1/4 teaspoon baking soda
1/4 teaspoon salt
85 grams butter
3/4 cup brown cane sugar
vanilla
1 egg
1/2 cup chocolate chunks
1/4 cup brazil nuts - chopped

Preheat the oven to 165C.
Combine your dry ingredients. Mix the sugar with the butter. Add in the vanilla and egg. Mix it with the flour mixture. Stir in the chopped nuts and chocolate chunks. Using an ice cream scoop, place the cookie dough balls on a baking sheet and bake them for 16 minutes. Let the cookies cool on the sheet for 5 minutes before taking them off. Enjoy :)

  2. My mum is a massive brazil nut fan, bordering obsessive when it comes to chocolate covered brazils so I just know these would be a huge winner with her! And they look pretty far up my street too :) Sometimes you just have to make cookies!

This post is yet again an example of how I procrastinate when it comes to studying or making a presentation. Whichever. This is going to be a lovely tale about a "magnifique" cake.  I got my inspiration to make that brown butter walnut sensation from  Procrastobaker . Hungarian Kakaós Csiga (Chocolate Rolls)
