I really don't like to throw words like the best and the most wonderful at all. But these cookies were really the best of the best cookies I've ever made! And I don't take my cookies lightly. If I could eat one thing forever, it'd be cookies. I wouldn't even have to think! I am extremely excited to try a new recipe, I always think, maybe this time I'll have it right!
Not that the other recipes I posted were bad. Not at all! They're all really good! It's just... I really don't feel like waiting 24-36 hours to have my cookie when I want that cookie now! And I get always so disappointed when I taste the dough and I'm like oooh-ahhh this is soooo good! Then I take them out of the oven... Wait that critical 10 minutes to chill and then have a bit and....Oh no! It's not that chewy, it's a bit too soft, it's cakey, it's not crispy enough, it's too dry, it's just sweet but tastes boring. So yeah, I am very very judgmental when it comes to cookies. I don't put up with just anything :)
So when I saw this recipe, I knew I had to try it! Browned butter cookies. Oh my... I could only imagine what a deep nutty and caramell-y flavor it would give to the cookies. So I ran to my fridge immediately searching for butter. We ALWAYS have butter at home. Not this time! Oh man, what a bummer! But I didn't give up, I called my friend to accompany me on my walk to the store. Well, the store didn't have butter. Have you heard anything like that? It had only margarine. Okaaay, let's do it with margarine.
But margarine won't brown! As it turned out after I tried to brown it for like 10-13 minutes. Sooo...What to do now? I had a whole bunch of melted margarine and a super strong determination to make cookies. I continued with the recipe, of course! Put the melted margarine in the fridge, waited until it became solid again and acted as if it was butter! The dough didn't taste that good this time. I was already sure that I'll have a mediocre or even worse cookie but if I got to this point then I'll finish it! I baked the first batch. I was in the middle of my workout but I got soo excited to taste them that I just quit doing it all together :) Ohhh what a nice surprise it was! The cookie was chewy, crispy and caramell-y! It was on the thicker side, as well! I don't like paper-thin cookies... So after I thought I messed it up, it turned out to be the perfect recipe!!!
Next time I will try it with butter so this time I will post the recipe with margarine because that's how I made it! Not sure what exactly made them so amazing so I'll just write down everything I did :) Hope you'll love them as much as we did!!
Chocolate Chip Cookies
adapted from Completely Delicious
1 cup margarine
1/2 cup brown cane sugar
1 cup granulated sugar
1 egg + 1 egg yolk
2 cups bread flour
1/2 cup cake flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chocolate chips or chunks - the darker the better
Melt the margarine over low heat. When it's fully melted, pour it in a small bowl and place it in the fridge. Chill it until it becomes solid again.
Preheat oven to 180C.
Beat the margarine with the sugars until creamy, about 4 minutes. Add in the vanilla and eggs. Add the flour, baking soda and salt and mix it together. Add the chocolate chips.
Make small balls with your hands from the dough. Place them on a baking sheet leaving space between each balls. Bake for about 13-14 minutes or until golden brown.
When taking out, leave them on the sheet for about 6-7 minutes and then place them on a wire rack.
