Classic Chocolate Chip Cookies


I don't even know where to start...Possibly making chocolate chip cookies is one of the easiest things in life. Even a kid can make those, mostly that there are those pre-made boxes you can buy at the store and all you have to do is add an egg and mix it together. You can't go wrong with that. But is it really worth it? I'm not one who likes way too easy things. I always think that if something is too easy then there must be something wrong going on. Nothing ever is easy in life. And yeah there are so many unpronouncable ingredients in those boxes that all I'm asking is WHY would anyone do that to their body? Okay, I've gotta admit that I actually happen to have one in my house because I was certain that I just can't make the original cookies that taste actually like cookies here in Hungary. I've tried so so so many recipes before and none resembled to the real American ones. So when I was in the US a few months ago, I stored in a few boxes of this and that (Betty Crocker oatmeal cookies, Roll mix, Muffin mix...). They are still in the kitchen...I don't really know why I even bought them since I'm a baker. I love baking and cooking and really don't like these pre-made stuffs as I already mentioned.

So I've been searching for the perfect recipe that would give me cookies I'm longing for. You know...The ones that are crispy yet gooey, a little soft, but not too soft, chocolate melting inside but not too much chocolate, ones that are slightly salty a little caramel-tasty and if you eat one you will be satisfied and not go for more and more because ah maybe this one will be better :)

And guess what happened? I found the recipe for that!! YAY!! I consider this a little bitty personal victory since I had to wait years to finally be able to make the perfect American-like cookies!!
I believe the magic lies in the chilling. I've never let cookie dough chill since I'm a kinda impatient type so if I'm making something I want to finish it right away. As I'm getting older and of course wiser (:P) I noticed that patience will really get me a long way.
So I advise chill the dough at least 6 hours but the longer the better. My leftover dough is still sitting happily in the fridge waiting for the big moment when dough becomes cookies :)

But I talked already too much about simple cookies so here is the recipe:

Chocolate Chip Cookies

12 dkg (a little less than 1 cup) Oatflour, it can be substituted to all-purpose too
12 dkg (a little less than 1 cup) Spelt white flour
3/4 teaspoon baking powder
1/5 teaspoon baking soda
3/4 teaspoon salt
150 grams(2/3 cup) butter
250 grams(2/3 + 1/2 cup) raw cane sugar
1 egg
1 teaspoon vanilla extract
chocolate chips, as much as you like
nuts, preferably

Whisk the flours, baking powder, baking soda and salt together in a medium bowl and set aside. Cream the butter with the sugar on medium speed until fluffy. Add the egg and then the vanilla and blend together. Then add in the dry ingredients, mix and in the end add the chocolate chips. Cover the bowl and put it in the fridge and let it chill for half a day to 2 days.


When the dough chilled, form small balls and place them on a baking sheet covered with parchment paper. Bake them for 12 minutes on 180C (360F).

  8. We stored it pretty sloppy and they lasted for 4 days like this. So in an air-tight container they last probably longer!
    And yes, they are from the same recipe but from a different batch!

  10. thank you! :) he is a Puli, a traditional Hungarian breed. they usually have long hair that become rastas over time but since it is a very hot summer, we cut his and his brothers hair :)

Brown Butter Walnut Cake with Chocolate-Mocha Ganache

This post is yet again an example of how I procrastinate when it comes to studying or making a presentation. Whichever. This is going to be a lovely tale about a "magnifique" cake.  I got my inspiration to make that brown butter walnut sensation from  Procrastobaker . Hungarian Kakaós Csiga (Chocolate Rolls)
